Dubai is in great company, joining both Buenos Aires and London in a select group of cities lucky enough to boast an outpost of SUCRE. Located in DIFC and born out of a partnership between world-renowned master chef Fernando Trocca and acclaimed mixologist Renato ‘Tato’ Giovannoni, the restaurant brings with it distinctly Latin American flavours and 21 years of culinary passion to our shores – the original branch launched in Argentina back in 2001.
It has since been coveted as a leading concept in contemporary Latin American cuisine, earning a spot in the Latin America’s 50 Best Restaurants list. Hailed as chef and master of open-fire cooking, Chef Trocca combines traditional open-fire techniques from South America with a breadth of global influences that have not only shaped the contemporary cuisine of his home city, but also inspired his restaurants worldwide – all while staying true to his heritage. SUCRE’s approach heavily relies on carefully sourced and high-quality ingredients prepared in exciting and unexpected arrangements, blending Italian, Spanish and Latin American influences.
Commenting on the opening, Chef Trocca says, “My vision for Sucre Dubai is to continue developing around the very concept that has permeated throughout my career. The urge to translate the essence of my roots, family and home country onto the language of a universal, cosmopolitan diner is reflected in SUCRE’s experience.” Guests can expect an ever-evolving modern menu curated to offer a stylish simplicity to some of South America’s world-class choices ranging from classic King Crab Tostada to Argentinian Bone In Ribeye and Squid Ink Paella – not to mention a punchy Monkfish Tail with XO Sauce & Black Beans and Empanadas with aged cheese and onions.
For a true SUCRE experience, the restaurant bar is led by Giovannoni, who won the Altos Bartenders’ Bartender Award in 2020. Considered one of South America’s most celebrated bar operators, he has played an integral role in the success of SUCRE since the start of its flagship in 2001. And because Giovannoni is known for embodying the colours and sounds of 80s Buenos Aires, guests can expect a cocktail menu reflecting the spirit and rebellion of this period.
Designed by Japanese architect Noriyoshi Muramatsu, the restaurant maintains a similar look and feel across all three venues, using a warm palette that nods to the brand’s heritage by combining the grandeur of Argentine history with raw, industrial features and bespoke glass chandeliers. Theatrical in scale, the large open-plan dining area is flanked by an open kitchen, allowing diners to catch glimpses of the soaring flames from the various wood-fired cooking techniques that take centre stage at SUCRE. The venue will feature a bar, lounge, terrace and restaurant including an evolving roster of resident bands to bring the best Latin beats to the heart of Dubai.
